At Ohishi they love to play with aging and finishing, often employing various different barrels. These have included former Sherry, peated Scotch, and Brandy vessels. This particular Whisky was left to mature for 10 years in French oak Brandy barrels. The juice manages to retain its rice character throughout the process, making for a very special and uniquely Japanese dram.

Nose: Sherry! Oaky, ashy, nutty, bits of citrus, grainy sweetness and dried dark fruit and leather. A touch of peppery spice rounds it out nicely and alludes to something that might open more with time, but the initial impression is quite nice.
Palate: A sherry bomb explodes on the palate sending shrapnel of rich vanilla, citrus, dried dark fruit, oily nuts, ash, oak and a strange but alluring sweetness. Like the aroma it has a bit of pepper to it and hints at opening up to more complexity with time.
Finish: Long and fueled by sherry with bits of cocoa, dark fruit, ash and spice.

Ohishi is a unique family-run distillery situated on the banks of the Kuma River -one Japan’s fastest flowing rivers, renowned for its superior water quality. Founded in 1872 the distillery sits in the Southwest of Japan, nestled in an idyllic mountainous countryside. They grow a distinct strain of rice at this majestic distillery called “gohyakumanishi” (5 million stones), using a unique organic style of cultivation that incorporates koi carp.
