Balcones’ True Blue whiskies are made entirely out of roasted blue corn. That’s unusual on two fronts: First, few corn whiskeys (not that there are all that many on the market to begin with) are made from a mash bill of 100% corn. And second, virtually all of the corn used in American distilling is commodity dent corn, the stuff grown on 1,000-acre farms in the Midwest. Used to make high fructose corn syrup, cheap tortilla chips, plastics, and fuel ethanol, let’s just say that dent corn is not known for its remarkable culinary properties.
Balcones True Blue Cask Strength Single Barrel 68.3% ABV Straight Corn Whisky Tasting Notes
Nose: French toast dusted with cinnamon. Heavy corn influence, with some salted butter and cracked black pepper.
Palate: Rich mouth-feel. Black coffee, juicy raisins and spicy cinnamon.
Finish: Loads of honey, demerara sugar and cedar spice. A little hint of cardamom, too.
Distillery Information
Balcones Distilling was the first Texas whisky maker since prohibition. Although it was not the first distillery, Garrison Brothers is slightly older, it was the first to release a whisky. Founded by Chip Tate and Jared Himstedt in 2008, it has grown to become one of the largest craft distilleries in Texas, with an innovative and diverse core range of whiskies.
