Seven Stills is a San Francisco-based micro-distillery specializing in distilling whiskey from beer and featuring bottle art from local designers. Chocasmoke is made by distilling a chocolate oatmeal stout and peat-smoked malted barley. It’s then aged for a brief six months in small barrels.

Nose: The interesting notes of a spirit distilled from a chocolate oatmeal stout struggle against the raw imbalance of a whiskey rushed through small barrels and short aging time.
Palate: There’s chocolate and cereal grain at the forefront, with salted caramel, honey, smoke, oak, and briny peat. It’s a bunch of interesting flavors that have not been given the time to settle down into a cohesive, mature whiskey.
Finish: Lond and mellow.

Seven Stills, the popular local brewery and distillery, is in hot water with the state. It’s expanded rapidly since its founding in 2012, and just opened a massive new location in Mission Bay, overhauling 22,000 square feet for $11 million.
