One of the great things about mezcal is discovering new species as they enter the marketplace for the first time. These agave are so hard to find that most mezcaleros don’t bother making it. Coyote is one of those species. Taking on average 12 years to reach maturity, the agave differs greatly in terms of size but consistently renders some of the most subtle and ethereal mezcals available. Made traditionally, this mezcal was made by Pedro Hernández and is bottled at 94 proof.

Koch Coyote Mezcal Tasting Notes

Nose: The nose greets you with ash, cedar, lime zest, gummy bears, and the fresh woody aromas of a broken sapling.

Palate: t is subtle but it lingers on the palate. Pineapple, lemongrass, juniper and candied-orange-peel titillate the senses.

Finish: Finishes elegant and smooth.
