Detailed Description
Whip Saw Rye is a made from a blend of whiskeys aged for up to seven years. They are finished in seasoned French oak wine barrels which previously held Steve Matthiasson’s cabernet sauvignon and Bob Cabral’s William Selyem pinot noir. The mash bill is 76% rye, 21% corn, and 3% malted barley.
Whip Saw Rye Whiskey Tasting Notes
Nose: Immediately this reflects caramel, vanilla, and sweet resin, a little more sweetness, which is not, however, reflected on the palate overall.
Palate: The palate gives a quick burst of sweetness at the beginning, silky butterscotch, toffee and caramel, then delves into notes of apricot, charred oak, resin, orange zest, cracked pepper, roasted pecans and mild back notes of tobacco.
Finish: A medium length finish.
Distillery Information
The Splinter Group was founded in 2013 by John Wilkinson of winemaker Bin to Bottle and Dave Phinney of Orin Swift Wines. They have since been joined by other experienced oenophiles (wine lovers) in the area, representing decades of experience. As non-distilling producers, they source their aged Whiskies from established producers across the midwest and southeastern United States and then blend them on site in northern California.
