Detailed Description
Ransom Old Tom is made using a base wort of malted barley, combined with an infusion of botanicals in two row barley corn neutral spirits and distilled in a copper pot still, then cask aged for three to six months (we understand usually 3 to 4 months). Six botanicals are used: juniper berries, orange peel, lemon peel, coriander seed, cardamom pods and angelica root.
Ransom Old Tom Gin Tasting Notes
Nose: Spicy pine forest and flamed orange zest nose with aromas of freshly split sappy pine, eucalyptus, dark honey, cardamom, star anise, angelica and bitter lavender.
Palate: A dry, huge but balanced palate delivers the flavours present in the nose but far more elegantly than the nose might suggest with pine and orange zest to the fore.
Finish: Orange bitters, rye dryness with distinct woody, smoky and dry orange zest finish.
Distillery Information
Situated in the foothills of the Cascade Mountains, Ransom Wine Co. & Distillery sits on a 40-acre farm just outside Sheridan, Oregon. The distillery, which opened its doors in 1997, was named after the funds required to start the business.
