Red Saw Rye Whiskey is an Empire style rye whiskey that honors the founding industry of their town. Named after the original saw mill overlooking the Honeoye Falls, their rye whiskey expresses the true provenance of their region. Using 100% Monroe County sourced grain, Red Saw Rye Whiskey utilizes 85% rye, and 15% malted barley in its mashbill. The rye grain is grown locally by many of their partner farms, and the barley is floor malted – the traditional way – by Pioneer Malting on Paul Road in Rochester.

Nose: A sharp, sweet nose. Almost floral. Cinnamon and mulled wine, rose and honeysuckle.
Palate: The palate starts sharp – ever have those cinnamon fireball sucking candies? Imagine the first quick bite of one of those – before quickly fading away to the back of the tongue. There’s a bit of a pause, and then the aforementioned sweetness rises up from the back, heavy with caramel and melon.
Finish: A faint bitter, cloying weight on the back of the tongue.
Distillery Information
Honeoye Falls Distillery in central New York is certainly doing what they can to change that aspect of the New York narrative. A small but growing operation in Honeoye Falls, New York, population 2,800, the Honeoye Falls Distillery saw their start in 2013. A Kickstarter campaign helped them with the construction of a storefront and tasting room, and things have grown for them since then.
