Detailed Description
Dave Pickerell is renown for his whiskey finishes — an aspect that he calls “flavoring for adults.” By resting the whiskey in the barrel of another spirit during the maturation process, the whiskey picks up some of the unique, residual flavors left behind in the barrel. For Batch 116, Dave chose to finish the whiskey in Black Brandy casks. The result is an apricot note that plays perfectly alongside the honey and caramel tones of the pre-finished spirit.

Nose: Burnt caramel, oak & honey
Palate: Honey, cinnamon, allspice, dark fruit, clove, mint, & unexpected apricot.
Finish: Long and smooth, slightly creamy with hints of butterscotch taffy, maple & honey

The vibration helps each drop of liquid seep deeper into the wood, extracting flavors in the process, one heavy riff at a time. The result is a perfect balance of sweetness and rye spice, with additional fruity notes that come from finishing in black brandy casks
